Spiderweb/Flower Cupcakes




They were supposed to be spiderwebs but I think they look like flowers... super easy: vanilla frosting, black gel and toothpicks.

Easter Cupcakes




So I found this idea using Google Images. I love love love google and I was looking for fun cupcake designs. I did my best to recreate these without any directions and I think you'll agree, they turned out pretty good.

I used basic vanilla cupcake mix, baked according to directions (mine were not vegan but you could find vegan cupcake mix or recipe), while they cooled, I mixed 4 drops green food coloring with 2 tablespoons of water, then added 2 cups shredded coconut and color mix into a gallon plastic bag. And then... I shook it like a polaroid picture.
When the color was even on the coconut I put it into a small bowl. I frosted the cupcakes with some vanilla frosting and then dipped them into the coconut. I used small candy coated chocolate eggs and used varying colors. For formalist artistic reasons, I used 3 eggs; each a different color. Although, you technically could use more, I'd always reccomend using odd amounts.

Double Layer Veggie Pizza!






Start off with a Pizza dough crust (I use store bought: Bertolli)
add tomoato sauce or pizza sauce (you can make from scratch, but I don't)
set aside.
Bust out your cutting board and start with red bell peppers, I use about half of one, cut into little bite size slizes, next start chopping red onion (any kind of onion is really fine) I leave about 1-2 inch long, thin, slices, you can also chop some tomato up if you're into that. I also cut up about 2 garlic cloves. Now pre-heat your pan to give these veggies a quick saute, use a tbls of olive oil. While that's going I cut up the broccoli I wait until the end so those little green pieces don't get EVERYWHERE. I use only the crown and I cup up smaller than bite size. If you're a mushroom person you could add them here now. After you cut/chop/smash all the veggies add them to the hot, oiled pan and cook for about 3 minutes, just move them around once and a while and get the onions translucent.
While that is cooking get your mozzerella cheese (you can use a vegan substitue) and add a THIN layer to the pizza.
take the veggies, remove from heat, add about 1/2 to the pizza, spread even over the cheese and sauce.
Add a 2nd layer of cheese, this one also should be thin.
Add the rest of the veggies on top of this layer and spread evenly, finally add the last of the cheese. you can use as much or as little as you like. Usually, I end up using about 1/2- 3/4 of a bag of cheese.
add to the oven, 450 degrees, bake as directed (usually 8-10 minutes).
Remove, allow to cool and then serve! yummy!!

Midnight Snack

Popcorn is best when cooked from scratch with a little Olive Oil or Vegetable Oil, add a pinch of salt and you're good to go. (just make sure to keep your lid on the pan, those kernals can jump!)

Skinny Bitch's Pasta Salad RENAMED









Best Pasta Salad Recipe! But I took the liberty of adding Red Bell Pepper and Red onion it makes it just a bit more tasty. If you're vegan it's good how it is, but if you're Veggie you could add a bit of parmesan or mozzarella cheese for more protein.

Caramelized Tofu with Pecans & side of Green Beans


Caramelized Tofu with Pecans and side of Green Beans:
Use one package of extra-firm tofu cut into thin 1-inch slices
Olive Oil
3 cloves garlic, minced
Several handfuls of pecans, whole and/or chopped
3-5 tablespoons organic brown sugar
2-3 servings green beans
Cook the tofu strips in large hot skillet with salt and a splash of olive oil. Saute until golden brown. Add the garlic and pecans, and cook for a short time. Stir in brown sugar. Cook for another couple of minutes. Scrape the tofu out onto a plate and set aside while you cook the Green Beans.
In the same pan, just add a touch more oil, another pinch of salt, and dial the heat up to medium-high. Stir in the green beans with an ounce of water. Cook for 2 - 3 minutes, stirring a couple times, add some more brown sugar and pecans, let cook for a few more minutes. Plate next to Tofu and serve quickly.
Serves 2 - 3 as a main, 4 as a side
